Almost Famous Giveaway: Dinner for 2 at Fabbrica

As I mentioned last week, the S.Pellegrino’s Almost Famous Chef Competition happened at Cirillo’s Culinary Academy in Toronto recently. Jean-Christophe Comtois from Quebec beat out six competitors from culinary schools across Canada with his milk veal tenderloin, Matsutake and ”Tomme des Joyeux Fromagers” flavored polenta. This veal and polenta dish was his winning ticket to Napa Valley where he’ll battle with regional finalists from across the U.S. this weekend at The Culinary Institute of America at Greystone in St. Helena, CA.

Last year after the event I gave away a gift certificate to Lee.  Michelle, owner of The Sweet Escape Patisserie, was the winner. This year I’m giving away a dinner for two to Fabbrica, owned by chef Mark McEwan, head judge on Top Chef Canada. Who will be this year’s giveaway winner?

Fabbrica’s mission

Fabbrica’s mission is to create the most authentic Italian cuisine they can from the finest possible ingredients in Italy. For example, they use Roma tomatoes ripened in the San Marzano valley, and flour hand-milled in Naples for pasta and pizza dough. The style of cuisine is uniformly rustic. View Fabbrica’s menu.

    In a cooking contest, I’d definitely make a channa masala. Not fancy, but I learned an amazing recipe from my grandmother who adds an East African twist to the traditionally Indian dish, and everyone seems to love it!

    My favourite tip: Use hearty and earthy spices such as allspice and nutmeg to add a heavenly aroma and flavour to game meats such as venison. The combination of sweet spices and spicy heat are always a favourite combination.

    I would make some of my signature Grahamwiches. It is like a BLT but uses Pancetta, an Avacado spread, marinated tomatoes and is done on a panini press.
