Mother’s Day is Sunday

Let’s celebrate all the moms out there this Mother’s Day!

Every year before Mother’s Day I get press releases and promo emails. The following came from The Siren Group on behalf of All the Best Fine Foods. Why not skip the packed, overworked restaurant and make her lunch at home instead? Because I rarely stick to recipes in their original form I’d also add asparagus and/or fiddleheads.

Spring in a Bowl

The perfect lunch Mom will love.  Packed with goodness and a vibrant green colour, the soup is paired with All The Best’s crispy Sesame Cheddar Cheesestraw.  Serve at a spring lunch or dinner: it’s light and tasty,  just chill and add a little cream or yogurt to serve cold.

Spring Green Soup

1 tbsp butter (15 ml)
2 shallots, chopped
¼ cup basmati rice (60 ml)
5 cups vegetable stock (1.25 L)
Kosher or sea salt
2 cups fresh baby spinach (500 ml)
1 cup green peas, frozen (250 ml)
1 head Boston lettuce, chopped
1 green onion, chopped
2 tbsp fresh mint, chopped (30 ml)
4 tbsp crème fraîche (60 ml)

  1. In a large pot, melt butter over medium heat. Add shallots and cook gently, stirring until softened but not browned, 4 to 5 minutes.
  2. Add rice and stir for 1 minute. Add stock and ½ tsp (2 ml) salt and bring to a boil. Reduce heat and simmer, partially covered, until rice is tender, 10 to 12 minutes.
  3. Stir in spinach, peas, lettuce and green onion and simmer until vegetables are wilted and soft, 2 to 3 minutes.

  4. Remove from heat and let cool for a few minutes. In a blender, purée soup in batches until smooth. Return to saucepan and stir in 1 tbsp (15 ml) mint. Reheat over medium-low heat until steaming. Taste and adjust seasoning. Serve in warm bowls and garnish with crème fraîche and remaining mint or add a little cream or yogurt and serve cold.

I can celebrate having a mother.
  • Mother’s Day WaySpa Gift Cards are on sale – $50 for only $39 – if you buy today. Or a $100 gift card for $79.99 until May 12.
  • Flowers from local Ontario greenhouses: Celebrate Mother’s Day one day early. Open Saturdays rather than Sundays, the Toronto Flower Market at 99 Sudbury has its first market this weekend. It’s Toronto’s first outdoor flower & plant market featuring product from local Ontario greenhouses. Enjoy a coffee and fresh-baked treats at 99 Sudbury cafe, while exploring the abundance of colour.   • Take mom to the theatre. Check T.O. Tix for same day discount tickets, Now or The Grid for listings.
  • If you’re taking her out, try a car service. Specifically, a Black Car ride from Uber, which has a promo code just for Mother’s Day.   • Know that many places don’t accept reservation, so prepare to wait.

  • Two Bite Saloon is offering a $25 Prix Fixe menu: House made buttermilk biscuits with homemade creme fraiche and country preserve, choice of either Pulled Pork Benedict or the House Smoked Salmon Benedict,  finished with fresh creole beignets served with a chocolate coffee creme anglaise + mimosa. Their new biscuits are FABULOUS. I got a taste test.
