Windup Bird Cafe’s Ganmodoki – Japanese Fried Tofu Burger

Following yesterday’s post, here’s the recipe for the Ganmodki that was demonstrated at Kid-Chen Confidential at Windup Bird Caf&#233.

200 grams firm tofu
80 grams pressed tofu
1⁄2 teaspoon sesame oil
1⁄4 teaspoon Dijon mustard
1 teaspoon crushed almonds
1 tablespoon sesame seed
1 teaspoon miso
1⁄2 teaspoon gluten-free soy sauce 1⁄2 teaspoon fish sauce
1 tablespoon honey
1 tablespoon cornstarch
20 grams edamame
Salt and pepper to taste


Chop vegetables (except edamame) and blend in food processor. Sautee.

Crumble tofu in a bowl with vegetables and mix thoroughly.

Shape the mix into a patty and fry on the stove. 

Add edamame on top of the patty. 


You could serve this on a burger bun, a wrap, a lettuce wrap or eat it on its own.
